G&uuml;n&uuml;m&uuml;zde Rize&rsquo;nin Ta\u015fk&ouml;pr&uuml; k&ouml;y&uuml;nde ve &Ccedil;ayeli&rsquo;nde pileki ta\u015f\u0131 ocaklar\u0131 bulunmaktad\u0131r. Hatta Rize&rsquo;nin \u0130yidere il&ccedil;esinde Pileki ma\u011faras\u0131 bulunmaktad\u0131r. Evliya &Ccedil;elebi&rsquo;nin seyahatnamelerinde Trabzon&rsquo;a geldi\u011fi zaman; &lsquo;&rsquo;Hamsi&rsquo;nin k\u0131rk t&uuml;rl&uuml; yeme\u011fi olursa da, en lezzetlisi pileki denen toprak kaplar i&ccedil;inde yap\u0131lmaktad\u0131r. &lsquo;&rsquo;diye s&ouml;yledi\u011fi bilinmektedir.<\/p>\n<p>Prof. Dr Oktay Belli 2009 y\u0131l\u0131nda Van&rsquo;da d&uuml;zenlenen I. Uluslararas\u0131 Do\u011fu Anadolu B&ouml;lgesi Geleneksel Mutfak K&uuml;lt&uuml;r&uuml; ve Yemekleri Sempozyumu&rsquo;nda Urart\u0131 kaz\u0131lar\u0131nda &ccedil;\u0131kart\u0131lm\u0131\u015f olan pileki ta\u015flar\u0131ndan bahsetmektedir. Ta\u015f oca\u011f\u0131nda s&uuml;rekli &ccedil;\u0131kart\u0131lan pileki ta\u015flar\u0131n\u0131n sonucunda, Pileki ma\u011faras\u0131 olu\u015fmu\u015ftur. Pileki ekme\u011finin di\u011fer ad\u0131&rsquo;&rsquo; Bayatlamayan Ekmek&rsquo;&rsquo;tir. Bu ekme\u011fin en &ouml;nemli &ouml;zelli\u011fi k&uuml;l s\u0131cakl\u0131\u011f\u0131nda pi\u015fmesidir. M\u0131s\u0131r unu, tuz ve su yo\u011furulur. Yerde yak\u0131lan ate\u015f k&uuml;l olmaya ba\u015flad\u0131ktan sonra, pileki ta\u015f\u0131 ate\u015fin &uuml;st&uuml;ne koyulur ve i&ccedil;erisine kara lahana yapraklar\u0131 dizilir.
